When our batches of honey are tested by independent laboratories, the tests look for concentrations of three key markers found in Manuka honey. These markers – Methylglyoxal (MGO), Leptosperin, and Dihydroxyacetone (NPA), are used to grade the quality of the honey.
UMF™ honey with a 10+ grading has at least 263mg per kg of Methylglyoxal as well as at least 150mg per kg of Leptosperin.

Description of our Manuka UMF™ 10+ Honey
As with other grades of Manuka honey, our 10+ graded honey has a creamy, viscous texture. The flavour is sturdy on the palate and has herbaceous undertones. You will know from the instant that it hits your taste buds that this is pure and authentic Manuka honey. The initial taste sensation soon gives way to a sweet finish that resembles light caramel.
It even smells delicious, with strong and earthy characteristics.

How Our Manuka UMF™ 10+ Honey is Produced
At Wilderness Valley, we make our honey right here on our farm in the remote setting of Ruatiti Valley in the KingCountry. It is a 5,000-acre remote hill country farm. Manuka trees, the nectar source for our honey, are common in the area. Manuka trees don’t just produce the nectar for our honey, however, as they are also a crucial part of the natural environment. They protect against erosion and provide shelter for wildlife.
This remote and unspoilt natural setting is the location for our hives. As we use sustainable farming practices here at Wilderness Valley, we spread out our hives across the Manuka bush on our farm, giving the bees wide open spaces to roam. This approach ensures there is no risk of overpopulating as our bees are not concentrated in one area.
We don’t use conventional farming practices as we believe our sustainable processes allow us to produce honey products of an exceptional level of quality while also taking care of the natural environment. Both are incredibly important to us – the quality of our honey and protecting our land and natural bush.
As part of this effort, we plant up to 15,000 Manuka trees every year. These trees produce the nectar for the bees in our hives plus, they are an essential component of the natural environment in this area.
